Easy Peasy Chicken Piccata kinda

I don't know about you but I love pasta. Chicken Piccata is one of my favorite Italian meals. So recently when a friend requested a bow tie pasta meal I started searching for a bow tie chicken piccata.

I didn't find one. And all the recipes I found had a million ingredients and wanted me to really cook. Like making a sauce and stuff. Um. Eh.

If you follow me on fb {shamless plug: like me on fb} you've seen me post about losing weight and watching what I eat and exercising. Let me too you- I never thought I would be someone who would weigh their food. Yeah I did it when I made this recipe to put it into my app.

What app? MyFitnessPal if you want to add me search for me by my email : bitofbyrd at gmail dot com

Below is the break down of the calories and the nutrition of the recipe. This is given a serving size of 1 3/4 cps.

This is the size/type jar of artichoke hearts I used. Ohhh this little jar has crafting potential!

Instead of making a sauce... I bought this flavored chicken that has a sauce. Score!

Easy Peasy Chicken Piccata {kinda}

Serves 4 {1 3/4cp servings}

Ingredients:

- 2 cans Chicken in Lemon Pepper Sauce {do not drain the sauce}

- 8 oz of pasta {I used mini bowties. this is about 2 2/3 cp}

-1 can rotel {do not drain}

-1 jar artichoke hearts {drain and rinse them. cut them into smaller pieces}

-4 TBS Capers {I REALLY like capers. You could put less if you wanted}

Boil the pasta to aldente {almost cooked} Drain it.

Mix all ingredients and put them into 9x9 glass pan.

Bake covered with foil for 30 minutes.

DONE! This is my kind of recipe. 5 ingredients. Almost no prep time. Cooks in the oven. Tastes good.

If you make it let me know what you think. How did you add your own spin to make it yours?
