Zucchini Lasagna | No Noodles

This recipe was so yummy! I did some googling and found that many other people had used zucchini to replace noodles in their dishes so I decided to try it.

I didn't find a recipe with everything I wanted... So I made my own. The pictures in the collage are pretty much in the order of the steps I am about to go over with you and then at the bottom I will go over my sauce. I made a half pan but I know most people would want to make a 9x13 so the recipe is sized for larger pan size.

Zucchini Lasagna

Ingredients:

  • 2 jars spaghetti sauce or my recipe for sauce is at the bottom
  • 2 cps low fat small curd cottage cheese
  • 2 cps low fat mozzarella shredded cheese (1/4 cp set aside for topping)
  • 1 egg
  • 2 large zucchini, sliced
  • Fresh or frozen spinach (optional and you can use as much or as little as you prefer)
I bought a new slicer for this recipe. I love it!

It is incredible sharp, and is only $10!


  • Slice zucchini lengthwise. While slicing boil water to quick cook the zucchini.
  • Put zucchini in water until semi cooked. Place in cold water to stop cooking. Pat Dry.
  • In medium bowl mix egg, cottage cheese and 1 3/4 cp shredded cheese
  • Spray pan with non stick
  • Layer lasagna. This is the order I used:
    • zucchini
    • sauce
    • spinach (patted dry)
    • cheese mixture
    • repeat
  • Top layer should be sauce. Bake covered at 350 for 45 min.
  • Uncover, sprinkle remaining mozzarella cheese over top. Bake 15 min. still uncovered
  • Let cool for 5 min then serve.


Spaghetti Sauce

Ingredients:

  • 1 lb ground Turkey
  • 2 28oz cans of crushed tomatoes
  • 4-5 diced mushrooms
  • 1/4 cp diced onions
  • 1/2 Tbs dried oregano
  • 1/2 Tbs dried basil
  • 1/2 Tbs diced garlic (in oil from jar is what I had on hand)

  • While browning meat in skillet add seasonings and garlic
  • When meat is half done add onions
  • When meat is completely cooked add crushed tomatoes
  • Lower heat to simmer
  • Add mushrooms
I make the sauce first so it has a chance to simmer and mix flavors while I do everything else.
Like I mentioned in my vlog yesterday spaghetti sauce is my favorite to play with because you really don't need to measure. Taste it. If you want a stronger flavor add more stuff to it. If you don't like mushrooms then don't put them in.
I love chunky sauce, that is why I have meat, onions, mushrooms and sometimes bell peppers if I have them diced in my freezer already.

If you decide to try it let me know! I find that the lasagna is really light and doesn't weigh you down like traditional Italian food does and it is great for left overs too!

Sesame Street First Birthday

Ive mentioned a few times how I went to GA recently. It was a great trip that went by too fast.

What did I do while I was there? My best friend and I threw her son, my godson, his first birthday party!

Nails sans hammer

I used to bite my nails and it took a long time to stop. I actually stopped based on a bet my sohpohmore year of high school.

And the way I was able to make it through the bet was by having a best friend, Amber, who lived across the street. How did that help? We painted nails after school all the time. As soon as they looked a little shabby we would redo them.

So I have had lots of practice doing my own nails. My tip to you... rotate your finger and hold the brush steady. That has always given me the most french tip success.

This how my nails look currently.

the tips are green and that is a dark blue from Walmart.

So you ever paint your nails? How long do they last? Mine look good for about 2 days and then they just look decent.

Blocked Website

I sit at my desk at work, on lunch... and I am sad.

That is why... my company has blocked pinterest. So even on my lunch... I cannot pin or browse. It is sad.

What are other ways you fill your time at work during your personal time?
I have been reading Harry Potter. I am in love.

Funny story... I was reading Peter Pan. I put on my facebook that I was taking Peter to bed with me... and that I got Peter out of bed to snuggle on the sofa.

There were about 2 weeks of posts about Peter. My dad even asked when he would meet Peter and he had my mom ask why I was publishing my sex life online.

One status even said something like, Peter wanted to bring Michael and John to bed tonight too, but I told them they had to stay with Wendy.

No one figured it out. So when I changed books I posted a picture of the Peter Pan book and Harry Potter Year 1 and said::
I'm bored of Peter, he is too immature. I'm taking Harry to bed now...I've heard he can do magic!

Making vague references on my Facebook page amuses me but no one else ever seems as amused.

Winning The Lottery



I know everyone has thought about. Even the people who dont play the lottery think about it.

Well here in Texas we have a few lotteries and since today is my birthday I bought a ticket. My BFF Brittany over at The Butterfly Mom decided to have a link up about this and the timing is perfect!

Her post is very pretty and well laid out. No surprises there. I could not find pictures of what I want to save my life... well if my life was really in danger I would have started picking without care of copyright :-)

Alas. No pictures.

Like Brittany mentions there are basics like paying off debt and what have you. But I sure feel like I have more of that than the average person and I am just glad that the banks see student loans as good debt.

I will pay off my mortgage, student loans and all other debt. I will open a trust, invest well. I will take the annuity option, not the cash all at once.

I think I will buy a bowling alley and a skating rink. Because they are fun and I dont want a large extravagant house with those things in it. People go out to bowl for the environment and that cant be duplicated in a home.

I will buy a new home, but I would also want to invest in realest and rental properties. Maybe an apartment building.

I will travel extensively. I want to see Rome, Greece, Germany, France, Norway, England, Ireland, Australia, Argentina, Alaska. I am okay with some of these being cruises. :-)

I might go back to school for things I like, like interior design and culinary arts.

I WILL have a maid and they will do laundry among other things.

I think that is a good list for the moment.
