Blog Neglect or Reflection

I have been an inconsistent blogger as of late. I do not consider a lack of posting being a "bad" blogger.

It is actually a blogging myth that you need to post every single day. Someone wrote a great post about it but at the moment I cannot find the post to link to it. If you know what post I am talking about please comment me the link so I can edit and add it in.

The post talked about how everyday isn't the important thing. Consistency in whether you post once a week or twice a month is important. But even more so than that quality is important.

I think that is what I am having a hard time with. I have a whole list of things I want to blog about. Many of them projects. But this time of the year the projects I am working on are all Christmas gifts and if I blog about them then the magic of getting a gift can be lost.

How do you manage your blog and your projects? Do you always post projects a year behind? That just seems like so much work, but it might be the best idea to not ruin the surprise.

I have been working on cleaning my house so I can have people over and so I can decorate for Christmas. Seems like everyone beat me to the punch. But I already got out my Christmas cards so I am okay with it.

I put that s@*t on everything

You might have read before about my love of Franks RedHot Sauce.

I am not someone who is usually brand loyal. I am movey saving loyal. So if that means buying with a coupon or buying teh store brand or making a substitue I will. There are exceptions.

I will only buy Bounty paper towels, Scott Toliet paper and Franks Red Hot. No Substitutions allowed.

Odd I know. But today is actually about my favorite dip. I will bringing this with me to Thanskgiving.

I double it, and usually still need more.

Franks Buffalo Chicken Dip::
350*
Bake uncovered 40 minutes.

Ingredients::

  • 2 pkg. (8oz) cream cheese, softened
  • 1 cp Ranch 
  • 1 cp FRANK'S® REDHOT® 
  • 1 cp shredded cheese does anyone really measure this? I just use a handful or more
  •  4 cans (12.5 oz. each) Chunk Chicken Breast in Water, drained
  1.  Mix ingrediants in 8x8 dish or an oven safe bowl.
  2. Bake for 40 minutes until hot and bubbly
 I serve it with crackers or sliced french bread.

When my sister Brooke was here we had a bit of a taste challenge. She also loves Buffalo dip but she would actually cook the chicken and shed it by hand and go through the mess and the trouble. I told her bah, and opened a can up.

She would rarely make the dip because it took so long to make. My prep time is 5-7 minutes and the bake time I can do other things in my kitchen. Time she would have spent wrist deep in chicken.

She tasted it and confirmed there is no difference in taste and as come to the quicker world of canned chicken!

When Pigs Fly and things to come

Did you see my Wordless Wed Whirl picture this week?

I got that little guy at the company health fair. The desks around my office are littered with little pigs. My little pig needed an extra boost.

So taking the floss I also got at the fair I cut a pair of wings for him and tied them onto his cute little body.

Thanksgiving is right around the corner... So things to watch for in the next few posts include RECIPES!

-Sausage Stuffing, which is low carb as it has no bread in it
-Candy Bar Pie
-Franks Buffalo dip
-Marshmallow salad

Do you have a favorite recipe that you serve on Thanksgiving? I always make a key lime pie and deliver them to an aunt's house. My mom also really likes pecan pie. Like I mentioned in an earlier post... Betty Crocker and I bake together each year for thanksgiving.

On another topic... I need your help! Do you know or have an 11 yr old boy in your house? I might be helping with a party for an 11 yr old boy and I dont know any to ask what kind of music do they listen to and what kind of party games would be good? it is going to be a mixed party because the mom says most of his friends already have girl friends gasp

Egg Bake Recipe

Yesterday I mentioned I made breakfast for Aunt B and Uncle Bill. I thought I would share with you what I made.

It is not original, It is from Betty. You know Betty... Betty Crocker. Yeah, we are good friends. We even made thanksgiving together last year. I took what she had and I adjusted it a bit to fit my needs.

Feeds 4. Uses a Square baking pan. 400*

Ingredients::

  • 2 Eggs
  • 1/2 Cup Bisquick mix
  • 1 pack sausage
  • Bell pepper ~ 1/2 cup
  • Onion ~1/4 cup
  • 1 1/2 cup frozen hash browns
  • 1 cup milk
  • 1 cup cheese, shredded
  1. Cook the sausage, bell peppers and onion. Drain fat off.
  2. Mix sausage combo, hash browns and 3/4 cup of cheese into baking dish. Stir to mix.
  3. In separate bowl:: mix Milk, Eggs and Bisquick. Pour into Baking dish.
  4. Bake uncovered at 400* for 40-45 min. 
  5. Top with remaining cheese, cook 1-2 more minutes until melted.
Let cool for 5 min or so and serve warm! It is so good and it has only a few eggs and it filling. I used low fat sausage so there was no fat to drain off. I don't measure the peppers or onions or the cheese I wing it. I also put pepper into the egg mixture. I used red and a green pepper and it was pretty.

This could easily be doubled like Betty makes. Betty claims it feeds more than I really think it can, I guess people didn't get seconds before. 


I love breakfast foods! And I love using my oven!

I created a bucket list for 2011. I wrote about it here. I challenged my readers to create their own 2011 bucket list.

A list of things you want to accomplish before the year finishes. I am not a big resolution person because I believe in starting something because you are motivated to, not because it is a certain day of the year.

Finish it Friday | Wintry Weather

Those pictures where taken in Texas! Last February I spent my birthday and the whole week of my birthday stuck in my house alone because of that beautiful cold stuff. The roads outside my house were horrible and I couldn't even walk to my mail box without falling.

I think as a general rule if I cannot manage less than 200 pounds without crashing I do not want to manage a car.

In college snow days were the best, because I would go home and we would sit and play cards and classes would get canceled and it was so much fun. Now... work doesn't get canceled. I just didn't get paid. And I couldn't go to my mom's so I sat at home... alone. It was lame.

Have you ever been stuck somewhere because of the weather? What did you do to keep occupied?

oh and by the way... here in Texas we are expecting weather in the high 70s- 80s this weekend! Outdoor projects to be completed!

Thankful Thursday | Excess

Thanksgiving is right around the corner. I am so excited that my sister will be coming home. I am going to make her candy bar pie and I am going to make the sausage stuffing that I made last year.
 
Today I am thankful for excess. What does that mean? Well I was going through my closet last night to go through things I have not worn in forever. I was able to pull out 30 pairs of shoes and 3 pairs of boots that I will be listing on EBAY.  You can see my currently listed items if you go check me out here:: TLCat21 on Ebay
 
I have so many shoes that it reminded me that while I might stress on different things in actuality there is a lot of excess in my life. And thinking about that makes me glad that I am not going without.

Byrd is Overweight! YAY!

Say what? Well two weeks ago I posted about how I had a realization that jolted me to start eating better and try going back to the gym. The post can be found here:: That's Obese | Wii Says it Best

Don't think that just because I haven't continually been posting about this I have fallen off the fitness wagon. Okay, it might have been dragging me alone for the last few days ::cough:: week but the resolve is still there!

I have still been trying to eat healthier and eat smaller portions. This is much easier to do during the week when my day is full of time constraints and schedules. The weekend is much more difficult.

So if I am still doing this, why not talk about it all the time? Because that leads to blog and fitness burn out. I figured two weeks is a good time frame to check into my progress and share it with you. I think I need to personally do it once a week to keep my motivation up, but the blog only needs it every other.

So as in my title... I am now overweight! YAY! Yay? YES! two weeks ago... Wii said I was Obese! So to be overweight and to have met and past my two week goal I was happy.

The goal I set was 2lbs in two weeks.


I lost about 1 % in my BMI and 5.7 lbs! yay!

Things I have tried to do differently include::

  • Drinking a lot of water, half a liter with every meal and snack.
  • Appropriate portions
  • Eating regularly though-out the day
Things that I have done that I shouldn't have include::
  • Having two sonic hot dogs, tater tots and soda for dinner last night
  • Not working out since before Halloween
For the next two weeks I resolve to make it to the gym 6 times in that two week period.

2011 Bucket List

I mentioned yesterday about Making a Bucket List. Not a regular bucket list for my life, but more about what I want to accomplish before the end of the year.
I am a list maker. So it is not uncommon that I create lists like this. Usually though, I write them on a sticky note and then they get lost and I lose my focus and get discouraged.

Example:: When I moved into my house in 2008 I wrote a short term and long term list of goals I wanted to accomplish that were home related. For the first few months I kept it on the fridge and would mark stuff off and date it as I finished. It then got moved to my front door on a magnet. Then It was gone. I dont even know what was on the list and I obviously cant mark stuff off on it any more. Part of me is sadden by that because I know I have gotten a lot of those things accomplished and yet there is so much more to do!

So instead of using just my sticky note... I am going to make my list digital by sharing it with all my great readers. And just so you know the list I am making digital is being copied from a bright yellow sticky note.

2011 Bucket List

  • Finish the Guest Room Mural
  • Organize the Shed
  • Create a Wood pile
  • Fix the back screen door
  • Install the front screen door

That is all that is on the bucket list. I know it doesnt seem like much... but there is less than 2 months left and the doors are things I have to recruit help with. In addition to those things I have Christmas crafts and baking to do! So I am trying to be realistic and challenge myself all at once. And I cant put my Christmas project list here because that would give away what my gifts will be!

Making a Bucket List

I did not make this amazing cheese cake but I think the idea is overly clever and fun. I do plan on asking the creator for the recipe to see if she will share it... and if she does... and she allows... I will share it with you!

The weekend is almost here and it will be a busy one here in TX for me.

I created a 2011 Bucket list this week. Things I want to accomplish or finish before 2011 kicks the bucket. I think I am going to create a bucket list for 2012 before it gets here to keep me focused in my goals. I will share both lists with you in due time. I challenge you to create a list to complete between now and the end of 2011!

I even saw this awesome project on Pinterest::






I am always able to find something on Pinterest that is awesome and worthy of making. I am planning on using it for my christmas crafting inspiration. I also recently curb shopped some chicken wire... so it will be an almost free project. I actually plan on using scrap wood to make a rustic looking frame.

ER is my niece and she is an amazing little girl. You might argue she wasnt really given to me and that is true. You dont get to pick your family but you do get to pick your friends. And your friends get to pick who is in their child's life. I have been awarded the honor of being asked to be a God-mom to both Huey and Tristen. I have been friends with Sabrina (Huey's mom) for oh goodness 20 years! I have known Brittany (Tristen's mom) since high school, so more than 10 years but only in the last few years have we started talking more and hanging out a lot.

Tickles? Well I met Elmo! Be jealous. Now where did I meet Elmo? At a bar. Don't tell your toddler, I would hate to ruin their opinion of the red guy. I put my drink behind his back, but now as I write this post I see a single bottle of beer snuck into the picture. Bad beer Bad.
